My Inkbird has been flawless for about 15 cooks now, it does frozen steaks like I've never seen.

I'm gonna just throw this out here. I've seared on the gas grill, In a CI pan, but my favorite method is to load my charcoal chimney about half full of lump, let it get screaming hot, and throw a grill grate over the top and sear away. The chimney gets hotter than the gas grill or CI on the stove, so it gives me an excellent sear.
