Water or not whith Butt?

I am getting ready to put a 10# boneless butt on my new home built propane smoker. My question is wheather or not to put a pan of water in with it?

I put water in my MES 40 pan whenever I'm smoking something that I don't want to dry out. (Butts, Briskets, Chuckies, etc,etc...)

Personally I don't put the water in until after the first hour (I like to dry the outer surface a bit first), and I bring it to a low boil in the microwave before I put it in, so the smoker doesn't have to work harder heating the water.

I also use water unless I am using my UDS then I don't add water as the drum is such a moist environment so I don't bother. I usually boil mine as well before putting it in the smoker.

Only time I don't use water in my WSM is if it is really cold outside and I am having problems keeping my temps up, or I am cooking chicken. Then I will either use a lot less water or none at all to achieve the temps I am looking for.
