I’m beyond excited to smoke this Wagyu Gold Brikset from Snake River. Couldn’t pass up the offer from a friend that had a hook up. $50 for. 10.6lber. with awesome marbling. He gets Wagyu Black all the time for a unbelievable price and I might just start sourcing from him.

I am by no means a master trimmer and this is only my 5th smoked brisket. Smoking it around 1am for some company tomorrow evening along with some chuck roast burnt ends.

Congrats that is a heck of a deal. I have never had Wagyu anything and am going to have to try some. Personally when trimming I like to leave about a quarter inch of fat and get rid of the rest. When I say get rid of I mean vacuum sealing it and freezing for use with venison grinding at a later date.

Congratulations on having a source for such a beautiful brisket. I know that I would give it a shot if I had access to it.

Looking forward to seeing how it turns out.
 
There was a big debacle with it early this morning, but I think I got it under control. I put in at 1am with the amazen tray going. Looked at my temp at 4:30ish. And it was 168. I quickly panicked and when to check on it and my mes was rolling a lot of smoke. I opened it up and the whole pellet maze was glowing red and smoking.

So... I took the entire pellet tray out and dumped out what I had and relit. I turned the brisket around and probed in a different spot and the temp was more like 145ish.

Seems like everything is under control now it was at 157 at 6:45 and the tray was doing ok.

My guess is some grease dripped in the pellets and obviously was probed in a fatty spot?

Hope all turns out well, we shall see.
 
Man I've never even seen a Wagyu brisket, much less tasted one!
But it is on my bucket list!!

I can't wait to see the final pics of this!!

Tips: Don't fill your AMNPS higher than about 3/8" from the top, to avoid fire jumping rows.
And keep something (Foil) a few inches above the AMNPS to protect it from Drippings, yet not affect the smoking pellets.

Duely noted on the tip- Filling the AMNPS too full might be my issue cause it jumps rows all the time. I used the mes cold smoke kit before for all my smokes and recently got the AMNPS. Third time using it and have not got anywhere near 11-12 hrs out of it. I have had to refill it in the middle of the smokes.

I do have a foil pan in the rack above to catch dripping, I just don’t think I had it over far enough to fully cover the pellets.

I have an mes gen 2 and I removed the water pan and put it over the opening on the slanted drip tray. Is there a better place to put it?
