I feel the same way about the brisket prices in TX, Chris.

If I could buy them that cheap out here, maybe even I could learn how to smoke the damn things. I struggle with them big time, I either over do them and they fall apart, or they dry out. I have failed more on brisket than with anything else, for lack of smoking them, due to their prices.
Although, I'm great at making chili meat out of my failed brisket attempts. :emoji_laughing:

Brisket is on the pricey side here also. Although it's easier to come by Dan. Being empty nesters doing a full packer lasts us quite a while so I don't mind spending the extra. My first few attempts also made for some great chili and hash.

It's only my wife and myself here as well, that never stopped me from cooking big though. In my family, food is always shared with family and neighbors, my family is getting smaller, my wife and I never had kids, so the neighbors love us. LOL. I prob buy 2 -3 brisket a yr maybe 4 if I'm grinding burgers.

I just suck at smoking brisket, and it drives me nuts, because smoking most other things came pretty natural to me. I honestly didn't have to work at it very hard to turn out some decent Que. Now, brisket drives me nuts, and I love the stuff. It's weird how certain things come natural, and others fight you, for instance I can't cook rice.....yup, rice, mine never lives up to my standards.
People that I cook for laugh about that, they always say you cooked all of this, and it was the rice that tripped you up. LOL.

I like Rice-a-roni and it's pretty simple to make. I just doctor it up a bit.
Us too. If I didn't have my zoo to cook for, I don't know what I'd do...
Vacuum sealers are a god send.

Well we finally had a day without rain on Monday, and after searching the local butchers and seeing nothing that I wanted. Well except this huge a$$ tomahawk steak, but at 19.00/lb connected to a bone that wouldn't fit in my 26. I decided to pass on it. So on the way home I stopped by our local mom-n-pop store to buy my usual 4.99 six pack of Genny pounders, and decided to check out their meat section. Holy cow what did I see!!! Not one, or two, but three nice looking Tri-tips sitting in their display case, and to top it off they were all about 13.00 each. When I say nice. I mean since TT is so rare around here they all look nice to me. Since I only had a twenty only one went in my basket.

First the steak(notice how it looks like the state of Vt.). Seasoned with just a pinch or two of salt-n-pepper.

Fired up the 22 Kettle with the Vortex, and on she goes. Because of the narrow tail. I had the Vortex running small side up. I didn't want to over cook the thinner part of the steak.

Thanks for staying with me. I will admit that I did cut one section of this TT incorrectly. I got kind of excited when I cut into it and screwed up the upper section. It still tasted great, but it did have a bit of chew to it.

nice TT are scarce down here in N Cuba. (Except Wild Fork which involves Miami traffic and are frozen.

Thanks John, Yeah I'd want to avoid the Miami traffic too. I've got a few more in sitting in a deep freeze currently and the local mom-n-pop has replenished their stock. I just hope enough people buy them. So he keeps on keeping on with the TT.
