Trying to use up some venison before season starts Friday.
5 lbs venison
LEM Backwoods Hickory ( 1st time )
Just used the Kitchenaid for this quick grind.

Added seasoning, cure with water and mixed until tacky.

Covered and fridge overnight. While smoker warming, used Jerky Canon to shoot out on racks.

Started out at 110* and bumped up every hr with 1/2 tray of LJ Supreme pellets .
Last ones pulled at about 7.5 hr mark.

Was satisfied with the taste for using for the first time. A little bit salty but certainly not overbearing. Thanks for looking.

I know nothing about venison, but is their a reason you didn't just slice it ?

I actually prefer ground meat jerky especially for venison.
As @Winterrider noted a lot of venison is smaller pieces of trim so better to save the larger hunks for other ventures.
