These have been a staple around our house for Years,
Just thought I'd share with all of you.
There are no rules for what veggies goes in, just what ever you like or have handy.

For these I used:
Hamburger Meat 80/20
Zucchini (I used 2)
Yellow Squash (1)
Onions (2 Med.)
Green and Red Bell Pepper (I used 1 each Small ones)
Jalapeno (1)
Tomatoes (2 med)
Cilantro (Hand full)

Cumin
Chili Powder
Garlic Powder
Taste as you go and add spices to your taste.


Browned the Hamburger meat till almost done then added all the veggies and spices.
Veggies were all diced (Make them as small or as large as you like)
Cooked everything till veggies were tender .

Warm some tortillas (I like Corn) Flour is great too.
Spoon some of that delicious mixture on your tortilla add a little picante or hot sauce, fold over and eat. Quick, easy and Tasty.

Back in the 80's I had a guy who worked for me that was Mexican and he would make this all the time, that's where I learned it. Good stuff !!

Got some burger thawed out now. Got all ingredients except maters ( wife doesn't care for anyhow ). Sounds like what might be for supper. Thanks Gary

Thanks Guys I appreciate it. Richie, sorry I didn't give you a shout while I was in Jersey, stayed pretty busy. We were in Springfield, visiting my son and his family. He is the one who runs Tower Cranes.

Nice 1 pan meal. I think the taco wrap is perfect. We do something like this but usually put it on potatoes or just in a bowl with bread to sop it up.....why haven't I thought about a taco wrap. Thanks for the write up and pointing out the obvious.

Looks great Gary. We haven't had a garden for a couple of years now, but a few of our neighbors are always dropping off fresh veggies. This looks like the ideal way of using some of it.
