Hey smokers, my question has to do with partially cooking ribs and then freezing them half way through the process.

Previously I have smoked my St.Louis ribs for 3 hrs, then ovened for two, then froze them until I wanted to eat them. When I smoke I smoke a lot at a time and freeze for later.

I have also just frozen them just after 3 hours of smoke, then taken them out and ovened for 2 hours and then grilled them to finish them off.

I have always frozen them in foil, now I m thinking of vaccuum sealing them.

My question, should I seal them right off the smoker (if 3 hrs) or oven (if 5 hours) and then freeze them? Should I seal them right away, let them cool and then freeze them? Or should I lest them rest then seal and freeze. I'm thinking if I let them rest then I am going to lose some of the juices, but them I'm not a pro, I'm just a smoker who has too much time on his hands to think about things like this.

Maybe it doesn't matter one way or another, I'm just seeing if anyone else has tried this out and can share experiences.

Your input would be appreciated.

For me it's fully cooked, cooled, and then vacuum seal for a rest in the freezer. Others may do it differently.
