One of the 50mm SS chubs are done.


The other 50 and two 70mm chubs need more time yet.

Looks good and taste like old world Amish fermented SS.

I'm interested in giving this a shot, once I finish up my current batch of salami.  Is this a 50/50 pork/beef mix?  Thanks!

All beef.

I dont do much cut in of pork with the beef. Just me.
