UDS and wood?

I love my wood. I started and learn't myself on a cheap SFB burning only wood. I am currently in the design phase for a small trailer mounted SFB type for comps. Triple sink+hand wash station, fresh and grey water tanks, hot water heater, hopefully everything to make it Ca. Health dept approved. But I see more and more people using, and winning, on UDS smokers. But everyone uses charcoal with wood chunks for smoke. Has anyone ever tried using one with strictly wood? I know, I will have to cut a door in AND make sure it seals so I can feed the darn thing, but before I go to the trouble I would like to hear any results with wood cookin' on a UDS. I am an^l retentive when it comes to food safety with chicken especially, and thus looking at a UDS for a separate cooker for said bird. Ideally, I would have a different cooker for each type of meat, due to different heat profiles I like to use, but that ain't possible unless I build a 30' mobile rig.
 
Sounds like you've got a real handle on what you're doing!  Interested to see what you come up with; and anything you can do to explain in detail all your systems and operations, please don't hesitate!  It will be a great tutorial for others!  Thank you so much!  There is no such thing as too much detail or Qview!
