Just a couple chubs of North Country SS .

Prepping the casings.
Kosher salt in. This softens the fibrous.

30-45 Min soak.

Got my mix and cure 1 ready to go.

One small chub and a larger.

Let em hang at room temp for an hour or so before the smoker.

I dont use the stock controller.

I saw the title , thought the Doctor gave you a prescription .
I started doing the salt water soak , after I saw it in one of your threads . Makes a difference .
Be watching for the slice .

I poked to much with my thermapen from the top, got some fat rendering. no biggie. Yeah i will get some wrinkles, no biggie again.

I think when my MES dies, I'll look into a TSM smoker.
I really like the design.

I would say yes as the stock digital controller is just a heat/time and does not ramp to the next setting.

Rick, nice looking SS! Like. Looks like you did not ferment it... Did you use fermento or buttermilk powder in your recipe? Just curious...
