I had originally planned to smoke this on Christmas day but the weatherman said otherwise.

Didn't think I'd get much juice doing the roast at 225. Put it in a pan with a rack just in case.

Into the smoker it goes. Made sure the probe was not touching the pan rim.

Let's take a peek inside since the the probe says 130 degrees. Yup. Instant read thermo confirms it.

Not a person was stirring, not even the mouse. That night they ate the prime rib and gave cheers to the house. That food was so good they said hell with it and smoked even that little mouse.

Looks great. I wish I could get my family to eat prime rib. But they get squeamish when they see any pink in their meat. My daughter even has to ask about the smoke ring in the ribs and brisket every time I smoke them, and she's 14 already.
