My Italian SIL always has Baked Ziti on the TG table but there is still the Turkey and fixin's. My family won't even let me change things up! Same yearly menu or face the wrath...

So I bought two 8 lb turkey breasts and put them in the fridge to thaw on Thursday. I had planned on brining Wednesday evening for a Thursday am smoke. Considering the guidelines above is this too long to be in the fridge? If so should I buy new breasts? Can I refreeze the ones I already purchased?

Not too long for the fridge, and don't refreeze. As far as brining goes, there's no need if it's not a fresh turkey. Odds are that the label will state it's already been injected with some type of solution: no need to do it twice. There's another recent thread that speaks directly to this--I believe JJ weighed in on the unnecessary need to double brine.

If the bird is Enhanced as most are, no need to brine unless you want a specific salt and flavor in the bird. Last year I injected which saved time and space...JJ

Good point JJ. I get my birds from Costco and they are not enhances and only $.99/lb. So Ill use Tips Slaughter House brine.

Well, Case....Are those turkey meatballs? I've heard a lot of different things, but I think that's the first time I've ever heard of spaghetti and meatballs. Have a happy TG and enjoy.

I bought a 21lb. frozen BB turkey that I just started thawing yesterday. It's sitting in the fridge now. I've been brining store bought turkeys for years. I'm pretty sure Butterballs are enhanced. Perhaps I should forego the brining ritual this year? What do you think?

I don't think the answer's changed in the last 4 posts, M.  Be willing to bet that the answer's still no need to brine an already enhanced bird unless you want a particular salt and/or flavor, but I may be wrong....

Correct. But even trying to brine to add your flavors will be hard in a enhanced bird. It's already full.
