A lazy day. It’s heck being retired. Weather is in the upper 70’s. Sunny. Light breeze. Thought we’d smoke some turkey legs.

Pop’s brine, using 1/2 cup Morton’s kosher salt, and a bit over a cup of white and light brown sugar.

Smoker settled in at 260. Apple wood chunks for about 3 hours. 181 IT.

Yep retirement is awesome! Legs look good, I love them in Pops brine like that.
 
Nice. How long did you soak them in brine?
 
Nice. Got some wild turkey in the freezer that I need to do something with sometime. Have thought about doing the breasts for something like sandwich meat using a brine. Used some legs a while back to make enchiladas after some time in the slow cooker to pull.
