+1 It's a great to get into curing too. Pops could not make it any easier.

Norman Rockwell/whole bird is a pretty sight but functionally a big hot mess. Spatch is better but very large and odd to handle. Parting is the way and best is just like Rich's chicken post: get it broke down ready for serving. Once in a casserole, park it in the oven 170F until it's time. We cook everything to be done like an hour before and hold all in the oven ready to go.
