Sue said the the other day she wanted to do a casserole dish with a turkey kielbasa we had in the freezer. So she got out her Taste of Home 9x13 cookbook and found a new casserole recipe.

When she showed me the recipe I said let's do it in the CI pans and received a resounding YES from her. We use the recipe as a starting point and made some modifications. Here goes.
  • 6 ounces uncooked elbow macaroni
  • 1 pound turkey kielbasa sausage, halved lengthwise and sliced
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 medium zucchini, quartered and sliced
  • 1 medium carrot, grated
  • 1 clove garlic, minced
  • 8 ounce can no salt added tomato sauce (Sue added italian herbs and pepper to it)
  • 14 1/2 ounce can diced, no salt added tomatoes
  • 1 large egg, lightly beaten
  • 1 cup cottage cheese
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
Cook macaroni per box instructions and grilled the kielbasa to get sear marks.
Here are the ingredients prior to getting them cooked.

Add the olive oil, carrots, onions and zukes to cook and render a bit, 5-6 minutes.

Stir in tomato sauce and diced tomatoes. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes.

Then add the kielbasa and macaroni.

Oiled the 8" CI pans with canola oil, and added 1/2 the mixture from the skillet as layer 1.

Mixed up egg with cottage cheese and put on top, then covered that with little of the mozz and cheddar.

Added the remainder of the mixture from the skillet to the CI pans and topped with the rest of the mozz and cheddar.

Then into the preheated grill indirect heat @350 for 30-35 minutes.

Off the grill and into the house to cool a bit and get plated.

One plate meal as it already had protein, starch and the dreaded vegetables in it..... :emoji_laughing:

Dang John, that looks good! Plus have leftovers...always a good thing. I don't know how you ever survived without your CI pans. Sure glad you're getting your veggies! :emoji_laughing:

Whoa John!! Another grand slam home run!! That looks superb but there's a concept I'm having a hard time wrapping my mind around. What's with the idea of plating it?Around here that never would have made it to the plate...I'd have devoured it right out of the skillet. Great job buddy!!

that looks great John, got to laugh at myself though when I seen the one picture I was thinking how did he get grill marks on that. then I had a brain storm that it must be a shadow.
 
Nice looking meal . I'd eat that for sure . I use cottage cheese in the lasagna I make , and always mix an egg or 2 in with it . Gives it nice lift .

Damn John! That looks awesome. The wife bought the Turkey Kielbasa before by accident. And I was surprised that it is actually pretty darn good! Your CI cook rocking. You still like those slip on silicon handle gizmos? I haven't gotten around to getting them yet.

I've never heard of that before. I bet the texture is much different. You use the small curd cheese for it?
