Very new to smoking. I’ve been trying to read everything I can about it. I picked up a masterbuilt MES 40 last weekend. I’m sick of paying an arm and a leg for my venison to be smoked into sausage. I’m in the process of smoking sausage right now. Hoping it turns out decent. Looking forward to advise from everyone.
 
Smoking meat is like the journey of life, there's many roads to take, some better than others. But its the journey which makes it and the lessons you learn.

(Wiping a tear from eye) that should be printed and framed... Or on a fortune cookie! All jokes aside, MES units are some of the most forgiving smokers to use, and this forum has any and all information needed to smoke basically any type of meat! Don't be afraid of asking questions.

Fyi..And i recommend taking tin foil and wrapping all your parts inside your smoking, not the racks but like the meat parts towards the bottom... it'll make clean up wayyy easier and prolong its life.

Well for my first ever smoke session, my venison sausage turned out great! I found for the next time I need a little less smoke but it turned out better then I thought it would have!
