Hey folks, haven't been posting in quite a while, but here are some beef ribs from a few weeks ago. I was at Kroger with a pack of baby backs in my hand when I noticed what I thought was pork belly in the next sale bin. No kidding on sale @ $4.99/lb were labeled as Chuck short ribs. I don't normally do these as cost is an issue, that and it's me and a doggo so portion size and leftovers etc. I was gonna post this when I came on and heard the bad news so I took a minute or so. Gonna do some of SE's Cumberland style this weekend.

This stuff is quite tasty. Not a shill for Kinders but this is good on the beef.

Odd to me that the bones were pulling back like that. Ran them at low smoke (160 on the camp chef) for about an hour, then 265 til they hit about 165, Wrapped in peach paper until probe tender. Put in an old bath towel into a cooler for a few hours while I grilled some corn. Sorry must not taken a pic in the paper. Here are a few more pics, Sure you can figure what happened!

Love beef ribs! I’m intrigued by the grilled corn after watching a YouTube video on it. Sweet corn season is already here in Iowa and need to try this.
If possible explain how you did it. Thanks

Thanks everyone! Same as anyone else, life gets in the way of posting stuff on the interwebs.

As to you @Ishi , grilling corn is both easy and dare I say quite tasty. Husk on or off is purely preference, but I prefer husk on. I peel the husk back and remove the silk best I can then toss the ears in a pot of water to soak for a few hours. While I do love me some straight on the grill corn, the husk on seems to give a softer bite without being mushy, say boiled corn mushy kinda sorta.

Another approach for corn. We soak the ears in water for 30 minutes. Then onto the grill without pealing back any of the husk. Rotate one quarter turn very 5 minutes. Pull after 20-23 minutes. Let sit on counter for a few. While they are hot to handle, pealing is rewarding as all the silk comes right off. Been doing this for years. Grilling corn is by far more flavorful than the pot of water on the stove method.
