Tripe jerky?

Anyone ever tried making tripe jerky?  I've made some deep fried tripe from a deer I harvested and I just tried my first beef tripe in a stir fry.  The fried deer tripe reminded me of calamari.  The stir fry flavor was good, but the texture was a little tough for me to deal with - just too mushy.  Some of the tripe had a crispy layer on it from sitting on the bottom of the pan and those pieces were much more palatable.  That got me to thinking - what if I try boiling some again for 3 hours and then season and smoke it as jerky.  That might give it a good crunch but still be fairly tender.  Anybody tried this?
 
I love menudo, and I love fried tripe, but hadn't thought about jerky!

I can't try it though, tripe is one of the few things the bride has banned from the house.
