Tri tip sammys

Hey guys, the wife asked me if i was gonna post this on the forum. Wasn't planning on it but hey what the hell. So i picked up a 3.5 lb. choice Tri Tip (that's all they had) and proceeded to trim and season it. Seasoned with Butt rub and Montreal steak seasoning. Let it sit in a zip lock bag in the fridge for about 4hrs. Threw it in the offset with some lump mesquite in the cooking chamber. The chamber was at 457f. Smoked it for 40mins with a blend of Oak and Hickory pellets in the AMZN tube, plus whatever smoke the mesquite put out. After the 40 mins it got wrapped in foil with a little bit of tallow and a splash of beer. After about 25 minutes the IT hit 140 at which point I unwrapped it and seared it on both sides until it hit 150. Pulled it and let it rest for about 15 mins which was as long as i could stand. Sliced it up across the grain and made sammys on some brioche. Paired it with some fresh potato chips the wife whipped up. She usually never finishes her meal but today she wolfed down the whole thing... now she cant move lol.

That looks GOOD!

Can you share how she makes those chips? I have been on a quest and have not gotten it right yet. I slice and soak but never really get there. I suspect I need my oil hotter.
 
She just sliced them really thin and soaked them for about 25 min. Then she pats them dry and fries them on medium heat in the oil in batches until they are golden and crispy. Then tosses them with salt n pepper.

Looks great! We like our steak more rare, but I understand. I've was blessed to have been gifted tri-tip once (Thanks Robert!) and loved it. It's just not available around me...

Tasty eating for sure! I've only had tri tip once but it has such great flavor! And anything with taters is always good!

Wish we could get them on a regular basis down here. looks great.
