Any day I get to play with fire is a good day. Decided to raid the freezer and found a Tri Tip.
After much pondering on my way back to the kitchen I decided Tri Tip Tacos it was ( going forward this will now be known around my house as triple T day or TTTDay for short). I proceeded to generously season with a Santa Maria style rub and cooked it Hot n Fast
(500f +) in the offset with Mesquite lump coal. Smoked for about 30 mins, then gave it a quick sear and wrapped it in foil with some beer for the rest of the cook. I pulled it just before it was well done.
I know what you're thinking, Blasphemy! But it was actually still juicy and that's how the wife likes it, as the ol' saying goes "Happy wife happy life". Oh and she was happy and later on that night so was I.
The wife made fresh tortillas and cuban style rice and beans and they too were delicious.
