Back when I was 23 years old I tried my hand at smoking salmon using a brine recipe from a friend at work. I had a lot of fun doing it and sharing it and thought I would give it a try again. I got a MES 30 analog smoker for Christmas that my wife bought for half price on black Friday. With a little reviewing on this forum I smoked up a chicken for starters using apple wood. I have to admit I expected producing smoke with a smoker would be a "no brainer" but right away sure enough I had trouble producing smoke and a quick review on this site helped me to resolve it...what a great site.

I struggled at first with keeping the analog model after seeing all the great smokers out there but for $100 I can't go wrong

My next two purchases are going to be an amazing smoker and a digital thermometer....Tom

Smoking is more of an art than it is a science.  There are definitely some "do's and DON'T's", but the rest is really all about having a good time and enjoying it.

If ya run into a snag, there are lots of experienced folks here to help ya out.  Good on the Mrs's for hooking you up!

Welcome to SMF - glad to have you here with us and also glad you are finding help from our posts. Both the AMNS and the thermo will help you take your smokes to the next level. I just used my AMNS last nite to smoke some chicken wings

First off Welcome Tom to SMF. You'll like it here for there are alot of really good folks here that would just love to help you with just about anything to do with smoking. Now there are alot of proven recipes for some amazing things here too. So if you need sign up for the E-Course it's free and it will give you the basics of smoking and some good methods to use also. So the next big thing for you to do is go out and get you something to smoke and if you happen to have any questions just post it here and we will be happy to answer them for you.
