Prepped them last night. Two tenderloins rubbed down with SPOG. Wrapped in thick cut bacon. I'll be using the charcoal smoker for this with either apple or hickory. Not sure yet. While getting these ready. I made a batch of pickled eggs.

I've yet to try Cherry wood. I'll have to give that a try next. Thanks for the idea.
