Mornin' all
So i planned on grinding, mixing and stuffing and smoking 25lb of ring bologna and 25lb of snack sticks problem is i forgot about some previous plans (wife made) for later this evening so can stuff today and possibly smoke the ring bologna and keep the sticks in the fridge till tomorrow. i will be using ECA in the sticks so i'm not sure if that's safe! TIA
 
That's good to know! Would I just add that to my rub before smoking then?
