TO STUFF OR NOT TO STUFF

Mornin' all
So i planned on grinding, mixing and stuffing and smoking 25lb of ring bologna and 25lb of snack sticks problem is i forgot about some previous plans (wife made) for later this evening so can stuff today and possibly smoke the ring bologna and keep the sticks in the fridge till tomorrow. i will be using ECA in the sticks so i'm not sure if that's safe! TIA

Dont put ECA in your mix and then fridge. When ECA is used it needs to be cooked within 30 mins of stuffing.

It also helps bind the fats and meat so they don't separate.
Make sure it's mixed really well....
