Hi to all the members on this forum.
I am Stefaans Blaauw, living in Namibia (old South West Africa) used to be a province of South Africa.
Our Capital is Windhoek.
I use to be in the professional hunting business too for some 5 years,
I am in the meat indstry for the past 15 years and have tried many recipies and made many mistakes.
Now I am moving away from the commercial processing and will pay a little more attention to the smoking processes, and of course try out as many as possible.
I use an steel office cabinet for smoking my meat, salamis, russian sausages and all thet needs to be smoked.
I will post some photo's later and start asking much more questions soon.
My speciality now, is to make smoked GAME PRODUCTS.
We have the best game meat in the worls, due to the dieet, and the free ranging aspect.
