You won't regret it, kabanos is HARD to beat and most everyone likes it.

Took while at 160* and 5 hours of smoke.

Pulled from smoker meat IT of 149*

Going to hang in the closet in the dark for 3 days.

The sheep casings are calibrated, close to 18mm size.

3 days is going to mellow the smoke. Your prob thinking whats in the jar? Thats my scoby for when i make fermented tea.

I will make some fresh for the next bbq. Already gave half this away today. Going to get some dry cure salami going also to bring.

I may be getting my hands on a new toyool, cant say what it is yet but its nice.

I been doing some sausages for the Canadian (snowbirds)

They want to buy it, i tell them just pay me back for the meat and my supply use is all. I dont charge for my time. (gots lots of it)
