So I wanted to have a 3 meat menu and decided on a half slab of Pork Belly, a 6.5 lb Spatchcock Chicken and 12 chicken legs that I did lollipop style. I selected 225 as the cook temperature on my Traeger Texas pellet grill. After doing some research (here and in my memory banks) I figured out cook times for all three so I could stagger the meats so they were all done at the same time. I put the pork belly on first, 1 hour later the spatchcock chicken and 1.5 hours after that, the lollipop legs. I kept the lid down most of the cook except to turn the lollipops (like them so much, gonna buy a rack for the next batch). Five and a half hours of total cook time and all three came out perfect. Pork belly at 175 internal, Breast at 165/thigh at 180 and lollipops at 175. Add a few cold salads, some peach moonshine and good friends and it was a perfect day.
