I just started using ECA to make summer sausage last year. Have made 2 batches so far. First 1 not so good .Texture was mushy. Blame it on old ECA. 2nd one was really good. Had the tang I was looking for. The NFDM makes it real hard to mix after night in frig which I always do with my mix before stuffing & smoking. Can I mix the NFDM with the ECA in the morning before smoking an get the same results?
