Spent my Sunday on my smoker. Starting to love it more every time. Still getting my fire box under control.
Anyway seasoned these Chuck roasts up as proscribed by the meat doc and let them marinate over night. Pulled them and slapped them on at 9 am. They took about 7 hours of hickory and hit 189 at 4pm. I pulled them and chopped therm up sauced and seasoned a bit more. Then under the broiler for 10 minutes while mixing them up to get them all sexy like. Would have put back in smoker but side was hungry and had to get to bed for work soon.
