Hi, all. I've just smoked my first 2 pork butts, and they turned out great. However, I'm concerned about my smoker already.
I have an MES 30, and the temperature is nowhere near what my digital thermometer is saying. I set it for 225, and the digital said I was hovering between 195 and 205. When I turned it up to 275, it only got to 240 to 245.
My 8pound pork took 19 hours, and the last 2.5 hours were in the oven at 275.
Ideas? Thanks in advance.
