When using a digital temp probe inserted into a potato, do you use the same potato the entire duration of the cooking? I understand the temp would change if swapped out. The integrity of the potato seems to diminish through the hours.
 
You would use the potato for the entire smoke. It may shrivel up a bit but will still hold the probe in place. As long as the probe is off the actual grate, all should be good.

I've also seen the following cut in half, and used as probe-holders: onions, lemons, tomatoes.
 
Yes you can use it the whole time. Try not to get to technical bout this little hobby or you could go koo koo, we wanna keep ya sane.
 
Since the temp probe is slide thru the potato with the actual temp registering part outside the potato it makes no difference if it gets ugly or not as long as it holds the probe off the grate
