Not much to say Nepas other than excellent as always. I bet you have a closet in your house that you hang sausage in instead of clothes!

I tried to use a closet but my wife said NO LOL

Got the bullets going in the big house this morning. Using hickory pellets.

That looks like a pretty sweet smokehouse! I really need to build myself one like that. I'd like to make mine big enough to house my MES too though so it doesn't have to stay out in the weather.

What do you use for a smoke/heat source and what temps is it capable of holding?

I use a Treager pellet hopper/fire pot assembly off one of my old pellet grills.

I can maintain heats from 60-180* with no problems. Also depending on my vents and temp set on the dial controller. You dont want to exceed 180 anyways or ya just might as well put it in your oven or grill.

I have the controller set on medium and have this temp holding steady.

The winter was kinda hard on the smokehouse so i have some PM to do on it.

Looks really good!  Something new to try.  About the closet.  After seeing pics of his setup, I don't think his wife says no to a lot of things.

Yeah the NO that came from her when i wanted to hang in the spare closet was the kind i dont ask to do again...LOL

Got the bullets blooming now, Going for 2 hours and they should darken some.

Thanks everyone. I had to go see a friend and let the bologna bloom for longer....Its good

Going to leave em like they are and paper bag em for a day or so.
