With the local weather conditions here I went another direction with the two top round roasts that I picked up at Kroger (buy one get one free).

I did a quick cold smoke with salt, pepper, onion and garlic powder. I smoked them for about 2 hours using hickory in my 5x8 tray.

Brought them in and dropped them into the Sous Vide. 130° for 22 hours and then a quick sear on the cooktop had them finished.

Decided to do a different version of a old favorite, Beef and Noodles... I made homemade egg noodles, sautéed onion, garlic and then deglazed the pan with drippings plus some beef broth. Added some salt, pepper, and Worcester sauce.

Sliced the beef, added noodles and served with a side of corn (got a little excited with the gravy!).
