Well Bryce had some game in the freezer he’s been bugging me to cook. Pulled out the turkey breasts and a deer roast. Had a small pack of beef ribs there also.
Bryce did a hot sauce and honey over night soak on one of the breast. The other I just Texas style with kosher salt and a heavy coat of CBP. Then Bryce put on killer hog BBQ rub on his.
Did the deer roast with some ‘shire sauce and then coated it with some “Hey grill hey” beef rub that

sent me in the gift exchange. Did the same with beef ribs.
In the upper right is a slab of beef that came off the ribs when I was trimming the hard fat off them.
This pic shows how the slab was on top of the ribs. Had a thick layer of hard fat under it.
into the smoker for a little maple smoke.
All sliced up and ready for snacking. The turkey definitely had a different taste from commercial birds. But it makes a mean sammich. The deer roast was darn good. And the ribs were good too. No real purpose in the cook. Just stuff to snack on for the week. Oh that separate slab of beef….well I ate it straight out the cooker. Gotta taste test right?
