My friends are having a party tomorrow just for the hell of it and asked for some brisket for the menu. Never one to turn down an opportunity to cook for people I said sure!

Just a hair over 22# between the 2 of them.


Out of fridge around 230pm today, rubbed with SPOG and left on the counter for about an hour while I got the WSM ready.

Should hardly need any charcoal today... almost 150° Just sitting in the sun


Cooker is running right around 230° and the meat flew up from 43° to 150° in 3 hours. Not too worried, my last brisket had a 9 hour stall at 167°. That should give me plenty of time for a good rest in the cooler before the party tomorrow.

More updates along the way...
 
Just hit 205° at 620am. Foiled up and going in the cooler until about 10am.

Probe was effortless going in throughout the flat and point.

Finished pics in a few hours.
