OK I made a couple pounds of summer sausage yesterday but my question is. Does it have to be refrigerated? It has cure in it and was cooked to temp (in oven I know don't kick me off forum time issues) so is refrigeration necessary?
Thank you Martin! I have it in the fridge now. Gonna vacuum seal some and refrigerate till tomorrow then keep on ice for some friends I'll be seeing tomorrow so they can take it home.
