Met a guy last sunday who makes his own beer. Has a very nice setup. Got to talking about what i do and he said hey i will trade you a growler of beer for some SS....Sure. Made up 5lbs of SS, Stuffed and smoked. I like vac sealing the chubs when i get an IT of 150, then vac seal (no ice bath) and they come to IT at 152 in the vac bag. Works great I put the netting on for looks this time again. I didnt have time to stuff and smoke yesterday so i just mixed and put in fridge. This morning i started to stuff and smoke. Almost ready to pull, this pick was 1.5 hours before pulling from smoker to vac seal. Vac sealed and hanging to cool (no ice bath) Then in the fridge for a couple days. One chub i did not vac seal, wanna compare to one vac sealed.
