Stuffed pork loin

I had a BIG pork loin in the frig that I was going to make into Thai jerky and mini hams, but the bride had a different plan. She informed me that she wanted pork chops for breakfast and stuffed pork loin for supper!

So, I stuffed a pork loin...

Butterflied the loin, which is a PITA for me!

Smeared cream cheese all over the loin

Added sun dried tomatoes, black olives, fresh chopped basil, dried tarragon, rosemary, kosher salt, and fresh cracked pepper

Topped off the fillings with some prosciutto

Then I trussed it up, coated with EVOO, and seasoned with the herbs and spices mentioned above.

Once the smoker heats up, she'll go into an apple smoke bath at 250 until I get an IT of 155...

Wow, I have never tried cream cheese in a stuffed loin. Is this your first time with this creation? It does look good.....
 
That looks like a tasty meal CB, I'll be back for the money on this one for sure.

Nope, I do this a couple of times a year. We love these things, I'd do it more often, but I hate butterflying the loins!

Like a fatty, the slices vac pack and freeze very well for later meals.

CB, I'm with you on the butterflying the loin,it's a pita.Love your anvil trick for lighting the tube! The loin looks delicious.

I think it's a very healthy alternative.

Thanks all, it came out great!

I just had some that was reheated in a vac bag in hot water. Almost as good as last night.
