After excelent results I had baking pizza I decided to make "pilot run" test with stuffed (smoked) chicken before throwing in fat turkey for Xmas.... I must say, epic results... way above my expectations...
Brine: onion, anis, salt, pepper, garlic, apple cider, brown sugar, white pepper, beer...
Chicken, happily swimming in brine for 18 hrs...
Stuffing: bread, milk, chopped chicken liver, parsley, garlic, white pepper, salt, egg...
Stuffing loaded in chicken cavity and between chicken breast and skin... tied and ready to go...
Chopped red onion, beer... lots of beer to keep it moist...
Smoke generator attached... left PID rasting temp... right PID meat internal temp....
