This soup is AWESOME! I have found that the flavor is actually better when the peppers are minced
rather than chopped but it is up to you.

Stuffed Bell Pepper Soup
-------------------------

  • Serves about 6 hungry people
  • Prep Time: 20min
  • Cook Time: ½ - 1hr
Ingredients:
  • 2 pounds ground venison, beef, turkey, or any combination
  • 3 bell peppers (1 green 1 red 1 yellow [or your favorite color combo]) chopped or minced
  • 2-3 table spoons brown sugar (or regular), start with 2 and see if you want a touch more sweetness then add a 3rd (I do 3 heaping spoons of brown sugar, mmm)
  • 1 large onion chopped
  • 6 garlic cloves chopped (can sub garlic powder)
  • 1 -15ounce Hunts Tomato sauce
  • 2 -15ounce cans diced tomato
  • 32 ounces beef broth (can use beef bouillon and water)
  • 1 tablespoon paprika
  • 2 cups rice uncooked (makes 4 cups of rice) - Make the rice separately
Cooking Instructions:
  • Sautee onion and garlic.
  • Add meat.
  • Brown meat adding salt and pepper.
  • Drain fat off from meat.
  • Add all other ingredients.
  • Cover and Bring to a boil and then let simmer for 30 min to an hour.
  • Boil rice separately.
  • Add over cooked rice in bowl.
Notes:
  • You might be tempted to just add the uncooked rice to the pot of soup and add more water, this is a NO, NO.
    This dish calls for a lot of rice and adding that much rice to your soup will turn your soup into a rice mush after a while or after sitting in the fridge. Simply keep the rice and soup separate and then combine when eating.

This is a good soup! I like it much better than just stuffed peppers. Yours looks great.

I’m gonna have to make this sometime soon, since I have forgotten about it.

Oh I'm sure you will love it Al.
We are supposed to get a little cooler in Dallas tomorrow but for today it's a weird high of like 80F hahaha. Maybe I'll make this over the weekend since it's so simple and fast but soooooo good! :)

Same here! I like Stuffed peppers but this is like all the flavor plus more and only 10% of the hassle or time to make :)

Funny the image somehow got screwed up. Should be fixed now, used an Imgur upload and link. SMF should be happy about that and have no issues displaying it now ;)
