HI.  I smoked 4 slabs of Baby Back Ribs on Sunday.

They came out really good.

We have 3 slabs of ribs left - I made too many on purpose.

So, Sunday night, I put all the left overs in zip lock bags and into the fridge.

I realize they probably shouldn't stay in there much longer, but will they be ok to freeze now that they are smoked?

I'm a little confused as to the best way to keep meat like this once I smoke it.

Thanks!!!

Hi there.

Your ribs will be just fine to freeze. Vacuum packing is what I prefer, but wrapped in several layers of Saran Wrap will be ok for a month or so.

I vacuum packed my left overs also, I did "lose" a pack of smoked ribs in the freezer found them a year later ! had to try them just to see how the taste was...... it did lose a little of the taste but you could not tell it was a year old , had a buddy over and gave him some , his reply , "didn't know you smoked yesterday!" when i told him how old , he didn't believe me and had to dig the vacuum bag out of the trash to prove it !

I do believe in the vacuum package method for meat !
