Jeez, your luck is really running bad. Hope it clears up soon. I know just what that`s like. After spending 30 years eating in truck stops, my guts are screwed up like that half the time.

I have never had the bug this bad. Normally it only lasts a day or two...and when I was working I never missed a day, at least that I can remember, for this. Like you, it hit me quickly. I am very concerned about my wife "catching" it. Her immune system is in the toilet....
IJ, took my wife and me three weeks to get back to feeling normal after our bout with the bug. We each only missed three days from work but the days we were there in those three weeks were not fun.
Mine hit me in a matter of hours. Started feeling bad at 3 PM. By 8 PM I was using all exit ports simultaneously. I initially thought I had food poisoning but the way it lingered and then my wife catching it the doc confirmed it was a bug that just had to run its course. I literally have not been that sick since I was a pre-teen.
Crackers, bread, butter, rice, vanilla ice cream, bananas, white puddings, plain pasta (or with butter), milk, lots of salty soups, and liquids in general. That's all I could eat when I realized I absolutely had to have something in me. I could not tolerate proteins (eggs, cheese, or meat), fruits, or vegetables at all until the start of the third week.
Once the third week passed, then came the opposite problem. They sell this 99 cent bottle of liquid at Target called Magnesium Citrate. Problem solved.

When the "dust" settles, consider plain yogurt to re-establish your gut microflora.
That's what killed my mother. She was in intense pain from spinal stenosis and arthritis, and she was on very heavy pain killers. They paralyze the intestines. She survived two kinds of cancer but died of toxic shock from a perforated gut.I take 60mg of Oxy a day which causes a "concrete plug up the arse".
Sorry to see this about your Mom. That is what I started taking the Oxy for, lumbar spinal stenosis. Have tried numerous times to get off of the narcotics but sadly can't even get out of bed without it. Between the Oxy, Gabapentin and aspirin I can at least still spend an hour or two a day outside.
