Found a small corned brisket at Trader Joe’s so made some ruebens. I substituted cabbage for the kraut. Simmered the 4.5lb flat for about 2.5 hours and pulled out at ~205 IT. The boiled the cabbage for a bit to get tender. Piled it on rye with spicy mustard, lots of Swiss and the cabbage,

Looks great! Have a corned beef on now. Will be making a Reuben as well, but a different take on it.

Corned beef, Swiss, homemade slaw, and Thousand Island dressing, all piled on a pretzel roll.

This was the first time I used spicy mustard and it was ok but it wasn’t Russian dressing.
