SS freezer build/lots of questions

hey all,
so I got an advanco stand up freezer from work. I would like to make it into a cold smoker so I can do all sorts of tasty treats. I am trying to figure out if I want to go old school with a normal wood fire box or if I want to use one of those fancy pellet/puck delivery systems.

first though a little about the freezer.
stainless exterior aluminum interior not sure about the insulation or if I should bother with it being I will only be cold smoking with it all the temp controls work on it can I repurpose them.
actually the compressor is still good too. don't need that though

my plan is to do an off set fire box/pellet thing, whichever I decide. I know a smoke stack is needed should it go at the top or middle

like I said lots of questions.
 
If you are trying to make a cold smoker check out smoke daddy Inc.com for their cold smoker attachments. And since it’s low temp you won’t have to remove foam insulation. Just add a stack to the top. If you’re talking about anything over the 140-150 degree range I would remove all the foam insulation and add fiberglass insulation.
