New to this all and looking for some guidance

Hi

I have a 3.5 lb chicken which I've spatchcocked and put in brine for a few hours , I'm unsure as to whether I should slow smoke it or put it on a hotter grill on the smoker, also how long will it take to cook it through ??

I do both, just a matter of tastes on that day.
I like a hot smoker at 275'-300'+ when trying to get a skin that's not rubbery. 2.5-3hrs
On the grill I cook the majority of the time bone down and skin down at the very beginning and end. 2.5-3hrs
Sometimes I smoke it the first hour just to get the flavor and switch to the grill to finish it up and crisp the skin. 2.5-3hrs

Never cook by just time or appearance/tenderness, always use a good meat thermometer to check the internal temp.
Cooking times can vary wildly from one piece of meat to another, grill temp, outside air temp and more.
And some meats are better when cooked way over minimum internal temp.
 
Good info DS, I also do chicken on a higher temp in smoker for safety's sake. Always use a meat thermo. and watch your IT. I am no expert and when it comes to poultry I use 2. I dont have one I trust 100% yet. 
 
I've done chicken at 225 & at 325.

In my experience even at 325 the skin is bite thru at best.

To get crispy skin you need to pull the chicken out of the smoker at 150 IT and finish on a hot grill or in the oven on broil.

We don't eat the skin so I usually smoke the chicken in the 270-280 range.

At that temp your chicken should take about 1 1/2 hours.
