Bear posting about his Spam and eggs as well as my son heading out on a hiking trip got me thinking about one of my all-time favorite camping sammies. Grew up on these always around the fire somewhere in the Manistee National Forest. Thought I'd share.
1 can of Original Spam
12 ounces of Velveeta
5 or 6 hard boiled eggs
1/4 cup minced onion
Enough mayo to moisten
A little mustard to flavor
Load up your buns and wrap in foil.
I'll usually put them on the grate on the edge of the fire pit when we are camping. Today they went onto the gasser. 15 to 20 minutes on high indirect.
Just be careful eating them. I like to let them set for a few minutes because they come off the heat the same temp as lava. Always reminds me of camping trips when I was a kid.
