Sourdough discard loaves.
Organic central milling AP 450g
Farmer storehouse Tartaria 125g (1 cup aside if needed while mixing.
I used my Zacme 8.4 qt to mix.
100g discard.
water 425g
salt 15g

So what is a 'discard' loaf?
When you feed your sourdough starter , some of it gets " Discarded " into the trash before feeding .
You can save that and use it in all kinds if things . Pancakes , waffles , bread and rolls .
 
When making your discard bread, is the discard strong enough for proper rising or do you have to “activate” it?

Yes

My starter is 8 years old and plenty active, even the discard is active and strong. If you feed discard you will have to wait for it to rise at peak.
