Looks great David! I hear ya on the temps. at my old house i didnt blink at the weather, but after moving to 8200 ft, its a whole different deal.

I normally don't mind the cold so much as the smoker is in it own shed and I am out of the weather once in there and the heat is rolling off the smoker.
But with the wind and the minus temps that low. Was just as easy to stay inside for that meal.

So at 8200 ft is it always cold in the winter , or is a nice day still a nice day, just cooler because of the height.

its cooler for sure. almost no one has AC. When winter storms come and January February its usually very cold. single digit highs, lows below zero (F not C). Summers Summer is very nice, hottest it gets is high 80's. the best part is the quiet and the wildlife. deer, elk, bears, foxes, moose and such.

No need to apologize for that great looking meal David. If every meal were smoked it would get old fast. It's freezing rain here today so I just threw a bunch of meaty shanks I had planned to smoke into the crock pot. Dare I say out loud I added a little liquid smoke .....gasp. Lol

Sounds good, Mona would like the 80 deg tops as she finds summers too hot sometimes for her .

And the animals, or as you put it the neighbors , loved the posts and Mona would just be in heaven with all of them.

I appreciate that, and some times mother nature really does win. Meaty shanks sound good to me.
I just did up some oven baked sweet and sour pork steaks , they were great.

I have never used liquid smoke, not even shore if I have seen it in the stores, but I was not looking either.

I remember many years ago watching cooking shops and there was an older guy ( as I sit here at 67 lol ) with a very heavy Cajun accent that always used liquid smoke. Cant remember his name , but remember him and the show.

Ha Ha , yes Matt , that is him and you got the lingo down pat. lol

Too bad he passed , would like to see some of the old shows , as it was way before I got into smoking
