Someone just bought their first brisket. I'm told I'm about to receive a master-class.

Pretty big talk from ol' Junior Pitmaster-ette, but she's been helping me for years and said between that and watching enough YouTube, she's ready for her first solo brisket. She's going to do everything from trimming to slicing, and she's gonna teach me a thing or two. 😆

Last night I told her the pellet smoker I just fixed is hers. First thing she said...not thank you, but take me to the store tomorrow, I want to make a brisket. So here were are....brisket in hand:

It's going to go on later for an overnight smoke, then an extended rest tomorrow until the Cowboys/Packers game.

I'll try and get some pictures throughout the process and keep y'all updated, I'm intrigued with what she claims she's gonna teach me.

Update:
We're off to the races! Her first "trick" she showed me was how easy it is to trim if you use paper towel to grip the fat. Had to humor her and pretend she just blew my mind 😆 . But she did a pretty damn good job on the trim, I'm very impressed.

She then moved on to the seasoning, she decided to use Moore's Hickory Beef Marinade as a binder (interesting...) and our Limp Brizkit Rub with a little added course black pepper.

Wrapping update:

Brisket is sitting right about 155° and bark is set. She just brought it in to wrap with some tallow.

Wrapped and ready to go back on.

And back on it goes....

She's using my Inkbird probes with an alarm set for 185° and is ready to go to bed. (She doesn't know but I will also get the alarm on my phone, just in case she decides to be lazy and not get her butt up when it goes off)

Seeya at the morning update!

thats awesome!! no telling how good a cook she will be in 30yrs!! you can see it in her face she is into creating the best chunk of beef she can. we only get better with experience!

move over 912 smoker. my plate sticking out too!!!!!

Still in for the final reveal, lookin good so far!

Morning update. Got up an hou ago and found her sitting in the living room and the who house smelling like bbq. She moved it inside and put it in the oven at about 4:30 am I guess. She woke up and saw the hopper was just about out of pellets and didn't know I had more in the shed, so just quietly brought it in and popped it in the oven @ 225°.

So, now it's sitting at 188° and she's about to turn the temp down to hold. Haven't seen anything except a wet looking chunk of butcher paper, but it damn sure smells good.

I’ll be following this post!,

You have a Very Smart young lady on your hands. Quick thinking on using the oven (instead of roaming around in the dark wondering where dad hid those pellets). Can not wait to see the cook.

That is so awesome! You must be a proud dad!

This is cool, can't wait for the reveal!

Pulled away any nuggets of knowledge yet?

Yup. A full hopper of pellets in this Pit Boss of hers doesn't last all night. 😆

Must be the cold front moving through Tejas right now that's upping the amount of fuel consumed.
