Just wanted to share some South African favorites I grilled up last night. Referring to the lamb bone-in loin chops and "braaibroodjies" which directly translates to grilled sandwich. The rest is just pork chops and some Argentine sausage.

For me the best way to spice and prepare the lamb chops is marinade with olive oil, lemon juice and rosemary and season using salt, black pepper, and freshly ground coriander. Cook till medium and get the rind of fat nice and crispy.

Classic "braaibroodjies" is just a sandwich with cheese, tomato and onion seasoned with salt and black pepper. Butter the outside of the bread.

Fantastic! Thank you for sharing and enlightening us!

All looks and sounds good! Do you make the sausage?
No, I bought the sausage from Wild Fork. I'm looking at getting the needed equipment to make traditional South African boerewors.

Missed this one. Great meal.

Well, now I know the name for a grilled cheese with tomato on the inside. Love them

Great looking! Coincidentally, just made some Bobotie and Geelrys for a work night meal!

Nice looking meal. Love lamb.

Wild Fork is a nice looking site. Unfortunately I'm not in their territory.

Yep, I was asleep too. That's some great looking outdoor food tight there.
Interesting setup. That square grate gives you alot more room.

I like to use the square grate because it gives me a lot of cooking area to work with. I usually keep the hot coals in the middle and leave a cooler zone on the sides. The overhanging area is great for letting meat rest or moving something off the direct heat while I cook something else. It works really well when grilling different types of meat that all have different cooking times.
