Herb Rubbed Roasted Rack of Lamb with Red Currant Balsamic Reduction.

So the boy has been craving some lamb chops so made that happen tonight….

Started off with a double pack imported from New Zealand…..

Rubbed sow with Dijon, salt, kinders, and fresh chopped herbs….

Searing the fat side on the Weber….

More searing to get good color.

Then up to the top rack to roast….running the Weber at 400 ish….

Once it his 100 INT and started to release some fat I did another sear on the grate level…

Then back ti the upper rack to finish roasting to temp….

Bingo 130 ish INT pulled to rest in the house oven at 140.

Cut side down in oil covered hot Hex pan….on high btu for a nice sear and color

Once they got some good color I added shallots and some butter pieces.

Next up some red pepper flakes, honey, and soy…then allowed to sear up more….

Once tender tossed them in the pan sauce then on simmer to hold for plating…..

The slicing……oh man….nothing but smiles, the INT was 136 at slicing…..

I’ve never done lamb before, had it in restaurants a time or so, but now I think I might have to try it!
If you like lamb doing at home is a rewarding cook for sure…. It’s the type of protein that you have to watch and I mean watch. Over searing will cause over cooking that is why I do the multi rotation sear. Then it seems like it takes a long time to go from 80 to 100 INT then it takes like 2-4 mins to hit 120 and after that you like 90 seconds to 2 mins to to 130….so you have to be watching like a hawk to take them off to an elevated rack to cool to keep the from going over. The ideal temp is 130-134. I use a probe in each rack to be sure. I also use an RFX probe which has 4 reading points along the probe in advance mode so effectively I had 8 probes between the two……

Thanks kilo c! We do sprouts on a regular basis but they are magic with the lamb and reduction!

Parents grow red currants and that pairing with balsamic would work well. Need to try myself. You juice the currants or maybe strain once cooked? Don't see them floating around.
